When storing organic eggs in the fridge, keep them in an egg carton as egg shells are porous. The flavour of other foods may penetrate uncovered eggs and affect their taste. Fresh eggs can be stored in the fridge for up to four weeks. Here are some old-fashioned methods of preserving eggs ....
1. Seal off the pores of cleaned, but unwashed, eggs with salted butter or wax, then pack eggs in a salt and bran mix, small end down. If kept in a wine-cellar or similar, they will keep for 6-9 months ... perfect for winter use when the girls go off the lay.
2. Dissolve about 1 part waterglass to 10 parts water, which makes an air-tight, alkaline solution that preserves eggs (these used to be kept in jars of a dozen or two). Once again store small end down. Sodium Silicate is the chemical name for Waterglass. 3. Dry egg whites and grind to a powder and freeze the yolks in usable batch sizes. 4. Pickled Eggs have been around for years, even before fridges were introduced. During those times, people found a way of preserving eggs, so that they remained fresher for longer. Basically, the vinegar and water are boiled together with the spices, the liquid is reduced and cooled and then poured over the hard-boiled eggs.
