pancakes__berries_285x170.jpgIt's important that your growing Eco Kids get off to a great start every day. And the best way to do that is with a big healthy breakfast. The first meal of the day not only helps wake you up, but it also gives your body the 'fuel' it needs to get you through the day. Too many Eco Kids these days have a rushed breakfast, a quick snack or no breakfast at all. Skipping breakfast or having an inadequate breakfast can mean your tired and droopy - making it harder for you to concentrate and learn at school or enjoy play!


 
 
A breakfast casserole takes a little time to prepare but it can be done the evening before then refrigerated. Pop it in the oven in the morning for 45 minutes while everyone is getting ready and you have a quick and nutritious breakfast!
 
Set the breakfast table the night before, even if it's only for juice, smoothie, toast and fruit.
 
French toast is another quick and easy breakfast, and a sure kid-pleaser. Add a little cinnamon to the egg batter for variety. Cut into shapes for younger children.
 
Keep pancake or waffle batter in the refrigerator, ready to pour on the griddle.
 
If you like to bake, you might keep a supply of muffins in the freezer, ready to warm in the oven.
 
Try making your own nutritious organic, no added-sugar granola and bars.
 
Quesadillas or breakfast burritos just might appeal to the "grab-it-and-run" types.
 
Pizza for breakfast? Organic pocket breads sprinkled with cheese and herbs and placed under the grill, are a hit with most kids.

 

Add seasonal organic vegetables to boot up your brekky.  Fresh organic vegetable juice. Carrots and beets with a piece of organic fruit juiced in is a great start to any day. A fresh organic vegetable omelete, or simply a serving of raw cut vegetables, with organic yoghurt / avocado dip.

 

Poatato / zucchini / corn ... pancakes / frittata / muffins.
 
Almost anything can be sandwiched in a crispbread; ricotta cheese, top with sliced banana (a fantastic source of fibre, potassium, vitamin C and vitamin B6) or your Eco Kid's favourite fruit, sprinkle with a little cinnamon for taste and add another crispbread slice as a lid. Scrambled eggs, organic sausage , a small organic chicken patty, are just a few ideas.

For the meat eaters - an organic suasage, rolled up in a light wrap - mountain bread made with organic flour.

Blueberry Pancakes

 

Here's what you'll need:


3/4 cup organic flour
dash of organic coconut oil
1 egg
3/4 cup organic yoghurt
1/2 cup blueberries

1 mashed banana
extra coconut oil for the pan

stove (You'll need help from your adult assistant)
large bowl
mixing spoon
saucepan
medium-size bowl
whisk
measuring cups and spoons
spatula

 

Here's how to do it:



In a large bowl, sift the flour. Set the bowl aside.


Crack the egg into a medium-size bowl, then add the milk / yoghurt / fruit juice (or combination), add the coconut oil.


Whisk until everything is well mixed.


Add the flour mixture to the egg mixture. Add mashed banana and whisk again until both mixtures are blended together.


Put extra coconut oil n the saucepan and heat it on the stovetop on medium heat.


Use a measuring cup or a small ladle to spoon the batter into the pan. Put some blueberries on top of each pancake.


Cook your pancakes on medium heat until small bubbles appear on the top.


Use a spatula to see when your pancakes are light brown on the bottom. When they are, flip them over with the spatula.


Cook for another few minutes until the pancakes are light brown on the other side.


Remove your pancakes and put them on plates to enjoy.

2 medium bananas
2/3 cup organic milk of choice
1/4 tsp powdered organic cinnamon
4 slices organic sporuted bread

Here's how to do it:


Lightly toast bread


Place all ingredients but toast in blender and blend until smooth.
Pour onto shallow dish; soak bread slices 1 minute on each side.
Transfer to oiled skillet and cook until lightly browned, about 3 minutes.
Flip and repeat.
 
Serve with fresh organic fruit / fruit spread or maple syrup.

Smoothies


Prep time: 5 minutes

2 ice cubes
1 cup organic milk of choice / organic yoghurt / organic fruit juice
1/3 cup organic cottage cheese (optional)
2/3 cup frozen blueberries / strawberries  / fruit of choice (bananas / mango or combination)

blender (You'll need help from your adult assistant)
serving glass
measuring cups and spoons



Pour all of the ingredients into the blender.
Put the lid on the blender and blend for 45 to 60 seconds until smooth.
Pour your smoothie into a glass and enjoy.
Serves: 1


Toad in the Hole


1 slice organic bread
organic butter
1 organic egg


Take a skillet and melt butter (enough to coat pan well). Take a cookie cutter and cut shape out of center of bread slice. Place bread in a skillet and break egg so that it falls in center of cut out. Fry until egg is done to your desire.
